Watermellon Sorbet

1 cup sugar

1/2 cup water

2 Tablespoons of lemon juice

3 cups seedless watermelon

2 Tablespoons of small chocolate chips (optional)

1. Cook the sugar, water and lemon juice together on medium heat, stirring until the sugar is dissolved.

2. Remove the simple syrup from heat and put into the fridge to chill about 2-3 hours.

3. Cut up the watermelon into cubes if it has seeds remove all seeds.

4. Puree melon in a food processor. A blender works just fine. Don't liquefy it just puree

5. Stir the pureed melon into chilled syrup. It's best if the melon is chilled too

6. Freeze in an ice-cream maker follow the manufacturer's instructions.

7. Stir in chocolate chips (optional ) You can add the chips according to ice-cream maker instructions or before then next step.

8. Pack in a sealed freezer safe container and store in the freezer until you are ready to serve.  If the sorbet is too hard to scoop, leave out for a few minutes or so to soften.

 

Apple Coffee Cake

I got this Recipe off the internet at Bed & Breakfast Inns Online. It's from the Ponderosa Lodge in West Virginia.

It has become a favorite of my whole family. I added an additional egg and doubled the butter to the original recipe

1-1/2 cups of all purpose flour

1 cup of granulated sugar

1 teaspoon of baking powder

½ teaspoon of salt

½ cup stick butter melted (margarine I Can't Believe It's Not Butter Works)

2 eggs

3 medium apples, peeled, cored, and coarse chopped

1/4 cup of packed light brown sugar

½ cup chopped pecans

1 teaspoon of ground cinnamon

Preheat oven to 350 degrees F. Coat an 8-inch square pan with nonstick cooking spray.

In medium bowl, beat the flour granulated sugar, baking powder and salt. In a large bowl, cream the butter and egg until light. Add the flour mixture to the butter and egg mixture and mix with a few light strokes just until the dry ingredients are moistened. Do not over mix: the batter should not be smooth. Stir in the apples. Spread the batter into the cake pan.

In a small bowl, combine the remaining ingredients: mix well and sprinkle evenly over the batter. If you don't like it very sweet, use half of the topping and save the rest for the next batch. Bake for 50 to 55 minutes, or until a wooden tooth pick comes out clean

Serve warm, or allow to cook, and cover until ready to serve

Old fashioned Macaroni and Cheese

2 C elbow macaroni

2 C shredded sharp cheddar cheese

1 C Monterey Jack cheese

3-4 Tbs margarine

2 large Eggs

1 ½ C milk

1 tsp salt

1/4 tsp pepper

Pre heat oven to 375 degrees. Add macaroni to boiling water season water with 1 tsp of additional salt. Boil for 8 minutes. Drain maccaroni set aside. Grease a 4 quart casserole dish. Beat together eggs, milk, salt and pepper. Mix the cheese together. Layer the casserole dish first with the macaroni dot each macaroni layer with some of the maragarine The next layer is cheese then another layer of macaroni make sure your last layer ends up with cheese.   Pour the egg mixture over the layers of macaroni, margarine and cheese.  Bake in the oven for 35 to 40 minutes or until cheese is lightly golden brown around the edges.  Allow the dish to cool slightly to allow the sauce to set before serving. 

Microwave Apple Shortcake

In the evening after work when I am in for the evening I often times get a sweet tooth.  I usually keep apples in the house and Bisquick baking mix.  So her is what I came up with.  I am always mixing up junk to eat using the microwve.

1 apple pealed cored and sliced

2 -3 Tbs sugar

1/4 tsp cinnamon (more or less to to your taste)

1 tsp flour

splash of lemon juice

a dab of margarine

2 or 3 Tbs bisquick baking mix

splash of 2 % milk to make a the bisquick mix into a soft dough like drop biscuts.

Put the sliced apples in a small mixing bowl add the sugar and cinnamon mixed together if you want a bit more juice your can add a little more sugar (not too much) just add a splash like 1/4 tsp on the apples and cinnamon for flavor. If you ever made apple pie you can do it just like you do your own pie filing. Place the prepared apples in a small microwave safe bowl put a small pat of margarine on top just to give it some flavor. (not absolutely necessary) Use the same bowl you mixed the apples and sugar in put the bisques in it. Since your are making a small amount add milk almost a drop at a time mix till it make a soft dough like drop biscuit. Don't over mix it ( A large recipe for drop biscuit is on the box) Drop this on top of your apples in the bowl. Bake in the microwave on high for 5 minutes first. Insert a tooth pick into the biscuit on top if it does not come out clean nuke it for 60 more seconds. Depending on how large the apple is this should not take any longer than 10 minutes. You must watch it carefully when you are microwaving the shortcake because with a microwave you can easily ruin the topping.

You can use any kind of apple.  I have used red delicious apples usually it is an apple that I should have been eating fresh instead of making it fattening.   The dish is about 283 calories.  Picture coming the next time I make it.

Watermelon Icecream

I'm not ready to post the recipe yet but here is a picture of the ice cream.  I want to perfect it to my own version.  It is good, not too sweet. I want to believe that it's healthy because it's made from fresh fruit it has whipping cream a little bit of honey and a little bit of sugar. So you have your fruit and dairy all natural. So it has to be good for you.

Strawberry Blender Ice Cream

This one you make to taste. Some times I use soy milk other times I use 2 % milk. Next time I will use heavy cream to see how it turns out. Use about two cups of frozen strawberries just enough milk to cover the blades in your blender. (I used fresh strawberries that I new I would never eat before they spoiled I washed pitted and froze them for later use.) Cut the strawberries to make blending them easier. As you blend the milk and strawberries add honey to sweeten to your own taste. It should come out looking like this if it is too soupy add more frozen strawberries. This bowl of Ice cream did have a peak on it I knocked it off when I slid it into the freezer until I went to get my camera to take this picture. I think this is pretty healthy. No additives sweetened with honey, tastes good too!

 

Frozen Fruit Bars

This is not much of a recipe, it's more of a way to get fruit into my husband.  I puree fresh pineapple in my blender.  Pineapple is usually juicy, I add a drop or two of lemon juice.  If the pineapple is not sweet enough to my taste I add about a tablespoon of honey.  I pour the mixture into the popsicle mold place the top on and insert the sticks and place in the freezer here is how they come out. 

There are so many recipe suggestions on homemade fruit bars.  I will try then all and make up my own.  What ever fruit that is in season and lend itself to be pureed then frozen.  I can make my own frozen yogurt bars. (Yep I have a yogurt machine)  I will make my own fudgesicles.  Actually you may ask:  "Why not just pick up a box of frozen fruit bars?"  What is in the frozen fruit bars?  Corn syrup Fructose.  My husband was diagnosed with prostate cancer in 2008.  Cancer thrives on fructose?  Fantastic news my husband's last biopsy in 2010 showed he is cancer free!!!!  We are not putting anything in his system to make him ill! 

Banana Freeze

I am always looking for a recipe where I have all the ingredients in my house is reasonable to make.  I like sweets and I look for sweets that are somewhat healthy.  Here is a recipe that I got off of Kroger, local store brand powdered skim milk box.  Or instant non-fat dry milk.  The finished product is so good!

Banana Freeze

½ cup sugar

1/8 teaspoon of salt

1 cup of water

1 large ripe banana mashed

½ cup orange juice

¼ cup lemon juice

½ cup instant nonfat dry milk

1/3 cup water

Cook sugar, salt and 1 cup of water together in a small sauce pan until sugar is dissolved (4-5 minutes) Remove from heat cool to lukewarm. Add mashed banana, lemon juice and orange juice. Pour into a 1 quart freezer pan and freeze until a mush. If you use a plastic quart tub this make take 2-3 hours. Check after an hour. It should be a little firmer than a slushy frozen drink but not solid.

Put Nonfat instant dry milk and 1/3 cup of cold water in a mixing bowl. Beat at high speed until stiff. When you lift the beaters out of the whipped milk it should form peaks that stand up and do not droop over. This may take up to 20 minutes to become stiff. Fold thoroughly but gently into the frozen mixture return to the pan and freeze until firm. Makes 6-8 servings. Freeze any leftovers.

Serving size for 6 servings per recipe is 133 grams about ½ cup 94 calories

Bad points high in sugar.

It  looks good and tastes better than it looks!

Banana Ice Cream

This is really simple I found it on the internet.  I did not believe it would come out like people who made it said it would.  So I gave it a try. . . . .

It's really simple first you peel and slice up ripe bananas spread them out on tinfoil a plate or plastic wrap place them in the freezer let them freeze for at least 2 hours. 

 

Once the banana is frozen put the slices in a food processor and blend on high.  You can start out at low speed and work up to high. You may have to scrape the sides down to get it to blend completly.  I have a small food processor which suits me just fine.  If you want to make a larger batch for more than 2 or 3 people I suggest a larger food processor

Don't be impatient continue to blend the frozen bananas they will blend together then it becomes a lighter in color that's when it becomes creamy and turns into ice cream!  When it becomes the constancy of ice cream it is ready to eat!  Yum. . .it is delicious.   I don't like fresh bananas. I have ried over and over again to eat them because they are so good for you.  Bananas are nature's perfect food.  This certainly will get bananas inside of me!

I should have made a peak on top.  With this recipe you get all banana with nothing added.
